This cake is the perfect way to use leftover juice pulp. An easy, healthy and nutritious recipe that we adopt for its simplicity!

Ingredients
- 1 cup (175 g) pulp (fruits and/or veggies)
- 8 pitted fresh dates
- 1 egg
- 1/4 cup (60 ml) maple syrup
- 1 cup (250 ml) milk
- 1/4 cup (60 ml) vegetable oil
- 2 tbsp (30 ml) peanut butter
- 1 tsp (5 ml) vanilla extract
- 1 cup (100 g) oat flour
- 1 cup (100 g) rolled oats
- 1/2 tsp (3 g) baking powder
- 1/2 tsp (3 g) baking soda
- 1 tsp (5 g) cinnamon
- 1/4 cup (50 g) crushed dark chocolate
Instructions
1. Preheat the oven to 350 °F (180 °C). Oil a 20 cm (8 in) square pan and set aside.
2. Using a food processor, blend the first 8 ingredients. Set aside.
3. In a large bowl, combine the rest of the ingredients.
4. Add the wet ingredients and stir well. Pour into the pan.
5. Bake 30-35 minutes or until a toothpick inserted into the center of the bread comes out clean. Let it cool before unmolding.
