Fridge forage whoopie pies (3 fillings)

These whoopie pies are the perfect way to use up your ripe fruits or soon-to-expire food in your fridge.

Portions  6 Whoopie pies per recipe

Ingrédients

(1) Fridge forage whoopie pies with cream cheese

  • 1/2 cup (125 ml) cream cheese
  • 1 tbsp (15 ml) soft butter
  • 1/4 cup (60 ml) Les Rescapés apple pie spread (or other jam/spread)
  • 12 Still Good cookies of your choice

(2) Fridge forage whoopie pie with pear and ginger filling (vegan)

  • 1/4 cup (60 ml) medium-firm tofu
  • 5 tbsp (75 ml) Les Rescapés pear and ginger spread (or other jam/spread)
  • 1 tbsp (30 ml) vegetable milk
  • 12 Still Good cookies of your choice

(3) Fridge forage whoopie pies with chocolate filling

  • 1 ripe avocado
  • 1/2 to 1 ripe banana
  • 1/2 cup (125 ml) chocolate
  • Maple syrup or honey to taste
  • 12 Still Good cookies of your choice

Instructions

(1) Fridge forage whoopie pies with cream cheese

1. In the bowl of an electric mixer, beat the cream cheese, butter and spread.

2. Spread about 15 ml (1 tbsp) of the filling onto the flat side of one cookie and sandwich with remaining. Repeat with the rest of the cookies.

3. Store in the fridge or freezer. *

(2) Fridge forage whoopie pie with pear and ginger filling (vegan)

1. In a food processor, pulse the tofu, spread and plant-based milk until smooth.

2. Spread about 15 ml (1 tbsp) of the filling onto the flat side of one cookie and sandwich with remaining. Repeat with the rest of the cookies.

3. Store in the fridge or freezer. *

(3) Fridge forage whoopie pies with chocolate filling

1. In a double boiler, heat the chocolate and stir with a spatula until smooth. Let it cool.

2. In a food processor, pulse the banana and avocado. Stir in the chocolate and mix until smooth.

3. Spread about 15 ml (1 tbsp) of the filling onto the flat side of one cookie and sandwich with remaining. Repeat with the rest of the cookies.

4. Store in the fridge or freezer. *

 

* If you decide to freeze the whoopie pies, you can let them cool before eating or eat them frozen, like an ice cream sandwich.
